Job Description

Aid the Kitchen Director in functions such as: Oversee and coordinate the execution of kitchen-orientated needs such as but not limited to, cleanliness, financial health, safety. The Assistant Kitchen Director is also responsible for the the growth and development of our team both personally and professionally.

Responsibilities

Operations

  • Hold the team and leadership accountable for all food waste related goals and procedures
  • Keep kitchen equipment expenses within budget 
  • Communicate with proper outlets regarding repairs and maintenance
  • Ensure any inventory loss or gaps are addressed using Profit and Net loss report
  • Meet with Cooper Contracting regarding SmartSheets
  • Work to provide a solution for any findings including but not limited to, safety and cleanliness issues immediately 
  • Maintain a culture of food safety and cleanliness
Sales

  • Use provided matrix  such as  Sales, Labor, AHA and create goals to simulate growth
  • Execute LEAN in all areas of the business
  • Check inventory for new roll-outs as well as hold leaders responsible for roll-out
Development

  • Hold Team Members and shift leaders responsible for all policies within our policy handbook
  • Work with Kitchen Director to identify and develop kitchen leadership
  • Coach Team Members on proper protocols and corporate set standards
  • Conduct formal and informal feedback sessions with team members and leadership
  • Execute training of new product roll-outs as well as hold leaders responsible for roll-outs
  • Work to provide a solution for any findings including but not limited to, quality and speed issues immediately 
Guest Experience

    • Protect our brand by continually evaluating the appearance of our products as well as the overall quality
    • Use provided matrix such as CEM, ERQA, SAFE, to ensure consistency within our products.
 

Accountability Measures

  • Profit ​>​ 13 %
  • Food Cost ​<​ 28.5%
  • Kitchen Productivity ​> 58%
  • CEM’s = Top 20% Quarterly in each individual temp/taste category, speed of service,
  • portion size, taste, and order accuracy.
  • Safe score of 90%</quarterly

Availability 

  • Must be fully available to work on either Fridays OR Saturdays
